Durbanville Hills Blanc de Blanc is a Méthode Cap Classique wine with a varied mixture of citrus and honey blossoms, the presence of yeasty biscuits with hints of toasty notes. It has a mouthwatering, creamy texture and an enticing linger. The abundance of citrus notes is well supported by a natural crisp acidity.
The wine is made of 100% Chardonnay grapes. Usually, these grapes are handpicked early in the morning, then brought to the cellar. Here, they are whole bunch pressed, settled, and cold fermented. The wine is then inoculated with a pure malo-lactic culture to complete the fermentation. Secondary fermentation then takes place under controlled temperatures in the maturation cellars.
