The Estate
Zevenwacht Wine Estate, located in the breathtaking Stellenbosch Wine Route is a modern wine farm with a rich history dating as far back as 300 years. The estate is owned and managed by the Johnson Family, known for their strong commitment to historic and cultural preservation, as well as conversation of the indigenous environment.
There are two prime farming locations that provide the grapes for the Zevenwacht winery. These are the home vineyard on the Estate’s 450-hectare property, supplying majority of the grapes. The other is the Zevenrivieren farm, located at the crest of Helshoogte Pass, providing the winemakers with a boutique selection of grapes that add to the fascinating variety of wines.
The Vineyard
In the vineyard, the Chardonnay grapes are planted on some of the best South West facing slopes of Polkadraai Hills. The vineyards are lying at altitudes ranging from 200 – 320 meters above sea level. The higher South West facing slopes give wines beautiful acidity that results in a pleasant pungency and longevity.
The full-bodied and richness of the wine is accentuated by the open canopies of the vineyards during ripening. All the flavours are backed with a minerality from the decomposed granite soils of the Polkadraai Hills.
The Cellar
Whole bunch is pressed. Thereafter, the juice is settled and racked to first, second, and third fill 300L to 500L barrels, where fermentation and maturation happens for 10 months on the gross less with occasional lees stirring to add the mid-palate weight and texture. 20% new barrels, 30% 2nd fill, 30% 3rd fill and 20% 4th fill barrels.
